Bourbon Panna Cotta with Spiced Peaches
Serves 6
Prep time: 45 minutes
Chill time: 6 hours to overnight

  • ¼ cup bourbon

  • 1 envelope (2 teaspoons) unflavored gelatin

  • 1 cup whole milk

  • 1 cup heavy cream

  • 2 teaspoons vanilla extract

  • 1/2 cup sugar
  • 1 cup creme fraiche or sour cream
  • 3 peaches, pitted, peeled and sliced (can use frozen)
  • 3 tablespoons brown sugar, or to taste
  • ½ teaspoon cinnamon
  • 1 tablespoon bourbon, or to taste

  1. Place 6 martini or wine glasses on a tray; set aside.
  2. Pour bourbon into small bowl; sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes
  3. In a heavy saucepan combine milk, cream and vanilla extract. Bring to a simmer.
  4. Stir gelatin mixture into milk mixture. Stir in sugar. Cook and stir over low heat just until sugar and gelatin dissolve, about 2 minutes. Remove from heat. Whisk in crème fraîche or sour cream.
  5. Divide among glasses. Cover; chill until set, at least 6 hours or overnight.
  6. Toss peaches with brown sugar, cinnamon and bourbon. Let stand at room temperature for 30 minutes. Top each panna cotta with peaches. Serve.
